How to Make Split Pea Soup
- Heat the olive oil in a large pot over medium heat until it shimmers.
- Add the diced onion, carrot, celery, salt, and pepper. Sauté for 5-8 minutes until softened.
- Stir in the garlic, Italian seasoning, cumin, thyme, and red pepper flakes. Cook for 1 minute.
- Add the rinsed split peas, ham bone, bay leaves, and chicken broth. Bring to a boil.
- Reduce heat and simmer uncovered for 60-90 minutes, stirring occasionally.
- Remove the ham bone, shred meat back into soup. Blend a portion for a creamier consistency.
- Serve the soup warm with hearty buttered bread.
