- 16 ounces mushrooms, cleaned and trimmed
- 1 tablespoon olive oil
- 2 tablespoons butter, divided
- 6 cloves garlic, minced
- 1 teaspoon kosher salt
- 1 1/2 teaspoons Worcestershire sauce
- 1 1/2 teaspoons soy sauce
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried tarragon
- 1/2 teaspoon black pepper
- 1/4 teaspoon chili powder
- 1/2 teaspoon browning sauce (optional)
- Fresh chives, chopped, for garnish
Instructions
- Heat a medium skillet over medium heat. Add the olive oil and 1 tablespoon of butter.
- Add the mushrooms and sprinkle with kosher salt. Sauté for about 3 minutes without stirring for a golden sear.
- Combine paprika, onion powder, oregano, tarragon, black pepper, and chili powder in a small bowl.
- Add the minced garlic and the spice mix to the mushrooms. Stir and cook for 1-2 minutes until garlic is fragrant.
- Optional: Add browning sauce for a deeper color.
- Pour in Worcestershire and soy sauces. Stir and cook for another 2-3 minutes until reduced and mushrooms are coated.
- Add remaining butter and stir until melted.
