  • 3 tbsp olive oil, divided
  • 4 garlic cloves, minced
  • 1/2 tsp crushed red pepper flakes (adjust to taste)
  • 1 can (28 oz) whole peeled tomatoes, crushed by hand
  • 1/2 cup dry white wine
  • Salt and black pepper, to taste
  • Fresh basil or parsley, chopped, for garnish
  • Pasta or grilled bread, for serving

Instructions

  1. Heat 2 tbsp olive oil in a large skillet over medium heat. Add minced garlic and crushed red pepper flakes, cooking for about 1 minute until fragrant.
  2. Pour in the white wine, scraping the skillet’s bottom to deglaze. Let it reduce by half, about 2 minutes.
  3. Add crushed tomatoes to the skillet and season with salt and black pepper. Simmer for 10-15 minutes, allowing flavors to meld.
  4. Meanwhile, in a separate pan, heat the remaining 1 tbsp olive oil. Add shrimp, seasoning with salt and pepper, and cook until they turn pink, about 2 minutes per side.
  5. Add the cooked shrimp to the tomato sauce, tossing to coat.
  6. Garnish with fresh basil or parsley. Serve hot with pasta or grilled bread.
