Ingredients
- 1–2 tablespoons olive oil
- 1 pound ground beef
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 (15-ounce) can diced tomatoes, undrained
- 1 (15-ounce) can tomato sauce
- 3 ounces tomato paste
- 4 cups chicken broth
- 1–2 cups water (adjust as needed)
- 1 tablespoon Italian seasoning
- 1 teaspoon sea salt (or more to taste)
- Black pepper to taste
- 8 ounces bowtie pasta (uncooked)
Instructions
- In a large soup pot, heat olive oil over medium-high heat. Add ground beef, onions, and garlic; sauté until the beef is fully cooked. Drain excess fat, if needed.
- Stir in diced tomatoes with their juice, tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, and pepper.
- Increase the heat to high, bringing the soup to a boil. Add bowtie pasta, reduce heat to medium, and loosely cover the pot.
- Simmer for 10–15 minutes, stirring occasionally, until pasta is tender and the soup reaches your desired consistency. Add more water or broth as needed to adjust thickness.
- To serve, add ricotta, mozzarella, and Parmesan to the entire pot or sprinkle over individual servings. Garnish with fresh parsley.
