  • 12 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can tomato sauce
  • 3 ounces tomato paste
  • 4 cups chicken broth
  • 12 cups water (adjust as needed)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt (or more to taste)
  • Black pepper to taste
  • 8 ounces bowtie pasta (uncooked)

Instructions

  1. In a large soup pot, heat olive oil over medium-high heat. Add ground beef, onions, and garlic; sauté until the beef is fully cooked. Drain excess fat, if needed.
  2. Stir in diced tomatoes with their juice, tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, and pepper.
  3. Increase the heat to high, bringing the soup to a boil. Add bowtie pasta, reduce heat to medium, and loosely cover the pot.
  4. Simmer for 10–15 minutes, stirring occasionally, until pasta is tender and the soup reaches your desired consistency. Add more water or broth as needed to adjust thickness.
  5. To serve, add ricotta, mozzarella, and Parmesan to the entire pot or sprinkle over individual servings. Garnish with fresh parsley.
