  • 1 tablespoon oil (plus more for frying)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 10 small flour tortillas
  • 1 cup queso sauce
  • 1 1/2 cups shredded cheese
  • Salsa con queso for serving

Instructions

  1. Heat 1 tablespoon of oil in a skillet over medium heat. Add the onion and garlic; cook and stir for 1 to 2 minutes.
  2. Add the ground beef and taco seasoning to the skillet, cooking until the beef is browned and crumbly, about 5 minutes. Drain any excess liquid.
  3. In another large skillet, heat additional oil over low heat for frying.
  4. Spread a teaspoon of queso sauce onto a tortilla. Place 1/4 cup of the browned beef mixture in the center and top with 2 tablespoons of shredded cheese.
  5. Roll up the tortilla and secure with a toothpick. Repeat with the remaining tortillas and filling.
  6. Carefully place the rolled tortillas into the hot oil. Fry until golden brown, 2 to 3 minutes.
  7. Transfer to a wire rack to drain excess oil.
  8. Serve warm with salsa con queso for dipping.
