Ingredients
- 1 lb large shrimp, peeled and deveined
- 4 cups bok choy, chopped
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 1 tbsp sesame seeds (for garnish)
- 2 green onions, sliced (for garnish)
Instructions
- Wash and chop the bok choy. Peel and devein the shrimp if not already done.
- In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the garlic and sauté until fragrant, about 1 minute.
- Add the chopped bok choy and cook until tender, about 4-5 minutes.
- Return the shrimp to the skillet. Add soy sauce, sesame oil, red pepper flakes (if using), salt, and pepper. Toss to combine and heat through for another 2-3 minutes.
- Garnish with sesame seeds and sliced green onions. Serve hot, and enjoy!
